Just look at these whopping bags of nuts. Tesco’s world foods aisle has bags of almonds, cashews and pistachios for knock-down prices.

If you have a spare 20 mins, make these protein balls. Freeze them in little bags of 4, great for children’s snacks or for you after a workout:

Cashew & Coconut Protein Balls

  • 1 cup cashews
  • 2 tbsps protein powder (hemp is best)
  • 1/4 cup desiccated coconut
  • 1 tbsp chia seeds (loads of omega 3 fat)
  • 10-12 pitted dates

Bung the cashews in a food processor (I know… I never used to have one either, but succumbed to a John Lewis one, not too pricey and now I love it). Add protein powder, coconut and chia seeds and process until combined. Soak the dates in a 50 ml hot water (add more if not enough), then add to the mixture in the processor. Should make around 12 balls but depends how big you like them. You can add sprinkles of cinnamon, other seeds or different flavours of protein powder (but do watch out for nasty sweeteners).

Have a groovy day everyone!
